What is the difference between Anhydrous and Monohydrate Citric Acid?
Anhydrous Citric Acid contains no water of crystallisation and has a slightly higher purity per kg, making it preferred for dry powder mix applications where moisture must be minimised, such as drink mixes and effervescent products. Monohydrate Citric Acid contains one water molecule per formula unit and is more commonly used in liquid applications, beverages, and processes where the small amount of bound water does not affect the final product.
