What is Dextrin?

Dextrin is a group of low molecular weight carbohydrates produced by the partial hydrolysis of starch through heat, acid, or enzymatic treatment. The resulting product ranges from white dextrins (produced under milder conditions, more soluble, less coloured) to yellow dextrins (produced under more intense conditions, darker in colour, with stronger adhesive properties). What is the difference between White Dextrin and Yellow Dextrin?
White Dextrin is produced under relatively mild conversion conditions, resulting in a product with high solubility but lower adhesive tack, commonly used in food and pharmaceutical applications. Yellow Dextrin is produced under more intense heat and acid conditions, resulting in greater conversion, a yellow to brown colour, and significantly stronger adhesive properties, making it the preferred choice for gummed tape, envelope adhesives, and corrugated board bonding.
How is Dextrin different from regular starch?
Dextrin is produced by partially breaking down (hydrolysing) the long starch polymer chains into shorter chains through heat, acid, or enzyme treatment. This partial breakdown gives Dextrin different functional properties compared to native starch, including better cold-water solubility, different viscosity behaviour, and in the case of yellow dextrin, the development of strong adhesive characteristics not present in unmodified starch.
