What is the difference between Sodium Bicarbonate and Sodium Carbonate?
Sodium Bicarbonate (NaHCO3, baking soda) is a milder, less alkaline compound than Sodium Carbonate (Na2CO3, soda ash/washing soda). Sodium Bicarbonate has one less sodium atom and an additional hydrogen, making it less caustic and safer for direct food contact and sensitive applications like baking and antacids, while Sodium Carbonate is more strongly alkaline and used primarily in industrial cleaning, glass manufacturing, and water treatment.
